The Best Pumpkin Cookie Recipe EVER!!
I am excited to do my first food blog! 😋 I have been wanting to do one for quite awhile now and finally settled on doing my pumpkin cookie recipe first. It is fall after all and these are a perfect autumn treat! These are, hands down, the most popular thing I bake amongst my kids and grandkids. I always do them for everyone’s birthdays and always take them when I visit out of town family. I have never met a soul who did not love these cookies! Mr. Hovland and I love them too so they are a bit dangerous to have around the house. 😉 I hope you give this recipe a whirl and I hope you and yours enjoy them as much as we all do!
- Ingredients For Cookies
- 🍪 1 Cup Sugar
- 🍪 1 Cup Canned Pumpkin
- 🍪 1/2 Cup Shortening
- 🍪 2 Cups All Purpose Flour
- 🍪 1 tsp Baking Powder
- 🍪 1 tsp Baking Soda
- 🍪 2 TBS Ground Cinnamon
- 🍪 1/4 tsp Salt
- Ingredients For Icing
- 🍪 1/4 Cup Butter
- 🍪 2 Cups Powdered Sugar
- 🍪 1 tsp Vanilla
- 🍪 1-2 TBS Milk
- 🍪 Sprinkles! It really is about the sprinkles. 😊
Instructions for Preparing the Cookies & Icing :
Heat the oven to 375 degrees. Cream the sugar, pumpkin & shortening together until smooth. Stir in the flour, baking powder, baking soda, cinnamon & salt. Drop dough by teaspoonfuls onto an ungreased cookie sheet. Bake until light brown, 10-11 minutes. Immediately remove from the cookie sheet and cool.
Heat the butter in a small saucepan over medium heat until light brown. Stir in the powdered sugar and vanilla. Add in the milk, stirring until smooth. Drizzle onto cooled cookies and add sprinkles right away before the icing starts to harden. Let the icing dry completely before stacking or packaging.
Tips For Perfect Results Everytime!
- 🍪 Use an electric stand or hand mixer when mixing the cookie to get a smooth, well mixed dough.
- 🍪 Line your baking sheets with parchment paper or silicone mats for even browning & easy clean up.
- 🍪 Avoid using store brand pumpkin if possible. It has been my experience that the cookies don’t always have the desired light, cakey texture due to what I believe is a higher water content in the store brands. Libby’s is the way to go.
- 🍪 This is a recipe that is easily doubled, which I recommend.
- 🍪 Use Butter Flavored Crisco Sticks for your shortening for best results and richer flavor.
- 🍪 Add a little extra vanilla to your icing for a more flavorful icing.
- 🍪 The icing can be a little tricky. You can add extra powdered sugar and milk as needed when you are making it. Stir until you get a fairly thick icing that has a velvety texture. I used a wire whisk.
- 🍪 Use a small cookie scoop to put the dough on the baking sheets for uniformly sized cookies.
