The Best Healthy Sweet Potato Recipe: Simple & Delicious!

The holidays are upon us and a big part of our celebrations involve food. Usually way too much of it, but isn’t that part of the fun? Many of us are in the process of thinking about and planning our menus for the upcoming Thanksgiving and Christmas holiday meals. In reality, many of the foods we eat on holidays are good for us such as turkey, green beans, salads and sweet potatoes. The problem lies in how we prepare the foods. Too much added sugar, butter, cream etc. With a little bit of effort and research we can make our holiday favorites much healthier without sacrificing flavor, comfort and tradition. This sweet potato recipe is everything you want in a holiday dish. It’s special, satisfying, flavorful and healthy, but it won’t leave you feeling stuffed. I prepare this dish for family Thanksgiving every year and it is always a hit!

What You Will Need:

  • πŸ‚ Cooking spray
  • πŸ‚ 3 1/2 pounds sweet potatoes (or yams) peeled and cut into 1 inch chunks
  • πŸ‚ 1/3 cup honey
  • πŸ‚ One large egg
  • πŸ‚ 2 tsps. ground cinnamon
  • πŸ‚ 1/4 tsp ground nutmeg
  • πŸ‚ 1/4 tsp ground ginger
  • πŸ‚ 1/2 tsp salt
  • πŸ‚ 1 TBS brown sugar
  • πŸ‚ 1/3 cup finely chopped pecans
  • πŸ˜‰ A few mini marshmallows if you want to be a little bad

Preparation Instructions:

  • 🍁 Preheat your oven to 350 degrees. Lightly mist an 8 inch square baking dish with cooking spray.
  • 🍁 Bring several inches of water to a boil in a pot with a large steamer basket in place. Place the sweet potatoes in the basket, cover and steam until quite tender, about 20-25 minutes.
  • 🍁 Transfer the potatoes to a bowl and allow to cool slightly. Add the honey, egg and spices. Whip with an electric mixer until smooth. Spread the sweet potato mixture into the prepared baking dish.
  • 🍁 Mix the brown sugar and pecans in a small bowl. Spread evenly over the potato mixture.
  • 🍁 Bake for 40-45 minutes until hot and starting brown around the edges.
  • πŸ˜‰ If you have decided to be a little bad, (I usually do) sprinkle the top with mini marshmallow during the last 10 minutes of baking.
