The Best Chewy Ginger Molasses Cookie Recipe-Soft And Spicy

I have been making these cookies for years and they have become a favorite of many family members. They are always made at Christmastime, but throughout the year also! Shout out to my daughter-in-law Nicole for passing this recipe from her family to ours! She, her Mom and her Grandma always made the best cookie trays and this cookie was my favorite! My messy handwriting on the recipe card, not hers 🤣🤣🤣.

These cookies are everything I want in a ginger molasses moment. Rich, cozy, spicy, deeply flavored and they stay chewy for days. While these cookies are baking, your house will smell like love, comfort and great life decisions! In fact, it just so happens that I have some in my cookie jar now and writing this blog makes me want one now so…..YUM!

  • List of ingredients:
  • 🍪 3/4 Cup Shortening. I recommend Crisco butter flavor sticks
  • 🍪 1 Cup Sugar
  • 🍪 1 Egg
  • 🍪 1/2 Cup Molasses
  • 🍪 2 Cups Flour
  • 🍪 1 TBS Cinnamon
  • 🍪 1 tsp Ginger
  • 🍪 1 tsp ground cloves
  • 🍪 1 Scant TBS Baking Soda
  • 🍪 Dash Salt
  • 🍪 Extra sugar for rolling the dough balls in.
  • Preparation instructions:
  • 🍪 Preheat your oven to 350 degrees.
  • 🍪 Line your baking sheets with parchment paper.
  • 🍪 Cream together the shortening, the sugar, the egg and the molasses. Mix until smooth and well blended. I definitely use my Kitchenaid mixer.
  • 🍪 In a separate bowl, add all your dry ingredients. Blend well.
  • 🍪 Add the dry ingredient’s to the wet ingredients in batches, mix very well.
  • 🍪 Chill the dough for 30 minutes or so, it will be easier to handle.
  • 🍪 Roll the dough into balls of your desired size (1 1/2 TBS or so is ideal) then roll the balls generously in sugar.
  • 🍪 Place dough balls 2 1//2 inches apart on baking sheet. Bake for 8-10 minutes.
  • 🍪 Allow cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack. They will firm up slightly while remaining chewy on the inside.

I generally always do a double batch. They disappear pretty quickly around my house. These cookies freeze very well and will stay fresh in an airtight container for up to 5 days. You can add a slice of bread to the container if desired to keep them super chewy. 😋
